Carlos David is a coffee producer descending from a family of farmers whose main crops were corn, beans, and sugarcane. At the age of 35, he ventured into coffee production, a field in which he has been working ever since, committed to produce high-quality coffee while minimizing its environmental impact.
As an espresso, the coffee he’s presenting us today reveals a distinctly sweet side that lingers, with notes of caramel, praline nuts, 70% chocolate and vanilla, complemented by a subtle acidity reminiscent of cherry and yellow apple. Add milk to reveal flavors of Coaticook chocolate ice cream! As a filter, it unveils a moderate acidity and aromas of caramel, nuts, and juicy apple. Overall, a classic coffee that is sure to please!
This coffee blends two Honduran varieties, Lempira and Ihcafe90, specially selected to thrive at moderate altitudes, below 1600 meters above sea level. Although their maintenance requires careful attention due to their susceptibility to diseases, their small size makes harvesting easier, and they both have the advantage of producing more cherries than the average varieties.
