Nearly 28 years ago, Don Fidencio Castillo embarked on his journey as a coffee farmer, planting his first 1500 coffee trees of the Caturra and Colombia varieties. Today, there are no fewer than 20,000 trees in full production, a success made possible thanks to the unwavering support of his family: his wife, Esmeralda, and his five daughters, who have turned El Pedregal into a true family enterprise. Inspired by their father's passion for coffee, three of his daughters, including the talented producer Francy, pursued studies in agronomy and food processing.
Finca El Pedregal was a pioneer in coffee cultivation in Arboleda. At the time, neighbors did not grow coffee due to low temperatures, sometimes dropping at 10 to 12 °C. Despite this significant challenge, the rich ecosystem of El Pedregal makes it an exceptional place for high-quality coffee production.
The Castillo family meticulously cares for their land, paying special attention to crop nutrition using well-composted organic fertilizers. Located at over 2000 meters above sea level, the farm benefits from a relative humidity of about 70%. Given the farm's slope exceeding 70%, windbreak barriers with banana plants have been installed to preserve the soil and prevent erosion. Weed management is done with a machete and/or scythe, maintaining soil coverage.
As drip coffee, Fidencio's coffee boasts great complexity and aromatic richness – it would be a perfect competition coffee. You can perceive a subtle acidity reminiscent of raspberry and pomegranate, accompanied by a lingering sweetness in the mouth and a texture reminiscent of chocolate syrup. As an espresso, it's bursting with flavors, where cherry, pineapple, and apricot mingle, with a rounded body and a remarkably juicy finish.
This is a coffee that greatly improves with time. Let it age for at least a good 21 days before drinking it.
